Montmorency tart cherry juice daily for four weeks experienced lower levels of uric acid in their blood, which is a biomarker for inflammation. A 2020 study examined whether tart cherry concentrate affected serum urate levels in people with gout. Fifty people were randomized to receive placebo or tart cherry juice concentrate for 28 days in doses of 7.5 milliliters , 15 ml, 22.5 ml, or 30 ml twice a day for 28 days. At the end of the study, it was determined that the cherry juice had no effect on serum urate levels. During the study, researchers gave 10 healthy women, ages 22 to 40, approximately 45 fresh, pitted Bing cherries for breakfast, and studied the impact the antioxidants in cherries had on fighting inflammation. Participants avoided other high-antioxidant foods that fight inflammation two days prior to the study, including red wine, tea, and certain fruits and vegetables.
